From My Kitchen: Pork Milanese

This will honestly be one of my easiest recipes this year! It’s still cold out, and I don’t know about you, but a good old pork dish will always feel like it keeps you warm inside when you encounter these frigid temperatures right now. Or maybe that’s just the German in me? Either way, this is definitely easy to make, it’s quick, and it is also a perfect family meal.

What you’ll need:

  • 4 – 6 boneless pork chops
  • 3/4 cup flour
  • salt and pepper to taste
  • 1/4 cup 1/2 & 1/2
  • 3 eggs
  • 1 1/2 cups seasoned bread crumbs
  • 4 tbsp olive oil
  • 4 tbsp salted butter
  • grated parmesan cheese
  • baby arugula
  • 2 lemons, cut into wedges

Place the pork chops between 2 sheets of plastic wrap, and use a mallet or a rolling pin to pound the pork very thin (about 1/4 inch thick). Place flour, egg (beaten) and bread crumbs into separate dishes. Season the pork with salt and pepper. Heat the olive oil in a frying pan. Dip the chops first in the flour, then the egg, then the bread crumbs. Add the butter to the pan. Fry them evenly in a frying pan or a cast iron pan, about 3 minutes per side. Remove from pan, and set aside on a plate lined with paper towels. Add grated parmesan cheese on top. Serve with lemon wedges on top of a plate of arugula. Pick any side dish to go with this pork dish. Let your diners squeeze the lemon on top of the pork.
