
I don’t think there are enough recipes with Italian sausage out there. It’s literally one of my favorite things to eat. So, if I find a recipe containing this delicacy, you bet your buns I’m going to make it. And let me tell you: it was so delicious! This recipe will be a keeper in my kitchen. It’s fairly easy to make, and it will make a great week night meal.
What you’ll need:
- 1/4 cup Extra Virgin Olive Oil
- 8 links of sweet Italian sausage
- 2 red bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 5 garlic cloves, crushed
- 1 bunch of broccolini, cut into 1 inch pieces
- 2 cups of baby spinach leaves
- pinch of red pepper flakes
- 1 (28 oz) can of crushed tomatoes
- one bunch of fresh basil
- 1 (12 oz) jar of banana peppers, undrained
- salt and pepper


Add Extra Virgin Olive Oil and sausage links to a deep frying pan or Dutch oven. Fry the sausages for about 4 – 6 minutes on each side over medium heat.


Add red peppers and cook for a few minutes, then add red onion and cook for about another 5 minutes.


Add garlic and cook for one more minute. Add Broccolini and cook for another 4 minutes.


Add the red pepper flakes and the crushed tomatoes. Stir, cover and simmer for a couple of minutes. then add the spinach. Stir well and let it simmer until the spinach is wilted into the sauce.


Add the basil, stir well and cover. Simmer on medium/low for 10 minutes. Add the Banana Peppers and the liquid from the jar. Stir well. Simmer for another 10 minutes. Season with salt and pepper. Serve with pasta of your choice.
