I’m such a lucky girl. Whenever I am looking for a new recipe, or something else that might be lingering in the back of my mind, all I have to do is look for something else (or nothing at all), and whatever I’ve been thinking about, kind of just crosses my path. Which is the case with this cocktail. I was wondering about a new rum cocktail recipe, something easy and summery, refreshing and tasty, and voilĂ , I instantly came across this recipe while browsing the internet for something totally unrelated. I made it, I loved it, it’s easy as pie, and it will 100% brighten up anyone’s summer evening.

What you’ll need:
- 2 oz Appleton Rum
- 1 oz fresh lime juice
- 1 oz honey syrup
- 3 oz Mionetto Prosecco
In a cocktail shaker, add ice, rum, lime juice and honey syrup, and shake well. Add Prosecco, then strain into a tall glass filled with ice. Garnish with a lime wheel (and a fun umbrella if you can find one!)
Cheers!
To make honey syrup, add 1/2 cup of honey, and 1/2 cup of water to a small sauce pan. Heat over medium heat, while stirring. Once the honey is dissolved, allow to cool, and transfer to an airtight container. Refrigerate for up to 1 month.
