From My Kitchen: Pancetta Pasta

I’m always down for a quick dinner idea. Especially when it literally combines some of my favorite ingredients. Pasta, pancetta, peas, cream and cheese. Come on now, this is practically promising to be delicious. And, of course, it is also a pretty easy dish to prepare. It’s a great meal for a family style dinner, or even one to be included in a meal prep for the week. I just adore this dish, and it’s a frequent flyer in my kitchen.

What you’ll need:

  • 1 (16 oz) pack of pasta of your choice
  • 8 oz pancetta, diced
  • 1 onion, chopped
  • 2 tsp garlic, minced
  • 8 – 12 oz frozen peas
  • 2 oz heavy cream
  • 4 oz parmesan cheese
  • salt and pepper

Prepare the pasta according to the instructions on the package.

Add olive oil to a large sauce pan. Add onion and sauté for 3 – 4 minutes over medium heat. Add garlic and sauté for another minute.

Add pancetta and cook for about 5 minutes. Add frozen peas and cook for another 5 minutes. Everything over medium heat.

Add the heavy cream, bring to a quick boil. Reduce heat and simmer for 5 minutes. Add salt and pepper to taste. Add parmesan cheese. Combine with the hot pasta and serve.
