#DOTW: Boozy Dole Whip

Are you ready for summer? Even though this might be the craziest summer ever, it’s still summer, and while most people are following the CDC’s guidelines by staying home, or at least avoiding larger crowds. For the time being, here in New York, bars are still closed, dining out is only possible if there is outside seating available. This means that if you want a delicious cocktail, chances are you have to make it yourself. But lucky for you, I’m here to help! This absolutely delicious drink is easy to make, and the ingredients aren’t hard to find. Celebrate summer with me!

What you’ll need:

  • 5 cups frozen pineapple chunks
  • 3/4 cup Coco Lopez
  • 1/2 cup sweetened condensed milk
  • 1/2 cup coconut rum
  • Maraschino cherries for garnish

Add pineapples, Coco Lopez, condensed milk, and rum to a blender. Blend well, pour into a tall glass, and garnish with a Maraschino cherry. (Feel free to use more or less rum, even a virgin cocktail works well!)

Hello there, fellow foodies! My name is Erica, I was born and raised in Germany, and moved to the US, New York City to be exact, in July of 1987. I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion. So I will continue to seek them out, and I hope you join me in my journey!
