Shrimp Scampi

I love seafood! It took me a while before I dared to cook shrimp, fish, or any other seafood, I always thought it would be too difficult. When I finally gave it a shot, I wondered what on earth I was thinking, because most recipes were actually super easy. As is this shrimp dish. It’s hands down one of my favorite meals to cook, and everyone loves it! It is insanely simple to make, and it takes no time at all. So, I hope you snatch up this recipe, and surprise your loved ones with a good old plate of delicious!

What you’ll need:

  • 1 1/2 pounds large shrimp, shelled
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 3/4 tsp salt
  • 1/8 tsp crushed red pepper flakes
  • 1/2 cup chopped fresh parsley
  • juice of half a lemon, squeezed
  • pinch black pepper

In a large skillet, melt the butter together with the olive oil. Add garlic and sauté for about one minute.

Add the wine, salt, red pepper flakes, and black pepper. Bring to a simmer and reduce by half, about 2 minutes. Add the shrimp and sauté until they are pink, about 3 to 4 minutes. Stir in the parsley and lemon juice. Serve with pasta of your choice, or even with rice.
