#DOTW: Pineapple-Basil Rum Fizz

I haven’t had any rum lately! Let’s fix that asap. These summer nights are getting muggier and muggier, so a refreshing relief containing rum and pineapple juice sounds about right. You can use store bought pineapple juice for this cocktail, but obviously making your own is going to make this drink taste even better. I met in the middle, and used pineapple nectar, and it was super delicious!

What you’ll need:

  • 2 oz Bacardi White Rum (or quality white rum of your choice)
  • 2 oz fresh pineapple juice
  • 1/2 oz lime/basil juice
  • splash of club soda

To make the lime/basil juice, squeeze 3 lime, add the juice to a blender together with 5 – 6 fresh basil leaves. Blend until there are no pieces of the basil are left.

Add rum, pineapple juice and lime basil mix to a cocktail shaker with ice, shake well. Pour into Martini glass, top off with a splash of club soda. Rim with sugar if desired, garnish with a lime slice and/or basil leaves.

I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion.
