Ginger Chili Chicken Wings

I have dusted off my cookbooks again, and I keep returning to Gail Simmons’ book Bringing it Home. Her recipes are right up my alley! This time I picked a chicken wing recipe, I’ve been on a chicken wing kick lately anyway. This wasn’t that hard, and they were just so delicious! I hope you enjoy this recipe and cook with me (and Gail!).

What you’ll need:

  • 3 pounds of chicken wings, tips removed, drums and flats separated
  • 1 tsp ground ginger
  • 1/8 tsp cayenne pepper
  • 2 tsp chili powder, divided
  • salt and pepper
  • 2 tbsp canola oil
  • 2 limes
  • 3 garlic cloves, minced
  • 2 tbsp fresh grated ginger
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • cooking spray

Heat the oven to 375 degrees. Spray 2 baking pans with cooking spray. Rinse with wings under cold water and pat them dry.

In a large bowl, whisk together ground ginger, cayenne, 1 1/2 tsp chili powder, 2 tsp salt, 1/2 tsp black pepper, 1 tbsp oil. Add the wings to the mixture and coat evenly. In the baking pans arrange wings skin side up without crowding. Roast them for 20 minutes in the oven, then turn them over and roast them for another 20 – 25 minutes at 400 degrees.

Meanwhile squeeze 1 tbsp of fresh lime juice in a bowl. Cut the rest of the limes into slices and set aside.

In a small sauce pan over medium heat, add garlic and grated ginger, cook for about 30 seconds. Stir in soy sauce, lime juice, honey, 1/2 tsp salt, 1/2 tsp chili powder. Bring to a simmer and cook for 3 – 4 minutes.

Transfer the wings to a large mixing bowl, and toss them in the ginger chili sauce. Serve with the lime wedges!

If you like a dipping sauce for these wings, here’s a squick recipe I added to the dish!

  • 1 cup plain greek yogurt
  • 1/2 cup buttermilk
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp sesame oil
  • 2 tsp rice vinegar
  • 1 tbsp Allspice
  • 2 tsp dried green onions
  • 1/2 tsp ground ginger
  • 1/4 tsp horseradish

Mix all ingredients and chlll.
