Shrimp Scampi

The main reason I taught myself how to cook is that I fell in love with dishes I couldn’t afford to pay for on a regular basis. So I learned to make it myself! I was honestly surprised at how easy some of these recipes were. And also how unnecessarily complicated some of them were written. Pretty much anyone can make Shrimp Scampi, I am convinced of that. So, as usual, I’m keeping this recipe as simple as possible, and I hope you’ll cook with me!

What you’ll need:

  • 2 pounds clean large shrimp (with tails)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp crushed red pepper
  • 1/2 cup chopped parsley
  • juice of 1/2 lemon
  • pasta of your choice

In a large skillet melt butter with olive oil. Add garlic and sauté for 1 minute. Add wine, salt, red pepper flakes and black pepper, and bring to a simmer. Simmer for 2 minutes.

Add shrimp and sauté for 2 minutes. Turn the shrimp over and sauté for another 2 minutes. Add parsley and lemon juice. Serve with pasta!

I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion.
