Smothered Pork Chops

This is one of my favorite dishes. Do I keep saying that? I guess I might, I have about 100 different favorite dishes!  But I promise you will absolutely love it. This recipe is based on a recipe of the Nealys from the Food Network. I made a few changes, but the credit is all theirs! This dish has a little kick to it, if you’re not into spicy food, please omit the hot sauce!

What you’ll need:

6 pork chops
1 cup flour
2 tbsp onion powder
1 tbsp garlic powder
1 tsp cayenne pepper
2 tsp paprika
1 onion, chopped
2 cups chicken broth
1/2 cup sour cream
3 tsp hot sauce
salt and pepper
peanut oil

Combine the flour, onion powder, garlic powder, cayenne and paprika. Dredge the pork chops in the flour mixture on both sides. Heat peanut oil in a Dutch Oven or large sauce pan and fry the pork chops on both sides until golden brown. Remove the pork chops and set aside.
Add the onions to the pot and saute for about one minute. Add 3 tbsp of the flour mixture to the onions and stir until you create a nice roux. Slowly add the chicken broth, whisking to eliminate any lumps. Bring to a boil, and then lower the heat to simmer. Stir occasionally while reducing and thickening the mixture. Add sour cream and hot sauce. Return the pork chops to the pot. Bring to a boil, then reduce to medium/low and simmer for 15 minutes. This dish is best served with mashed potatoes!Bon Apetit!

Author: Gotham Foodie

Hello there, fellow foodies! My name is Erica, I was born and raised in Germany, and moved to the US, New York City to be exact, in July of 1987. I have worked most of my time here in the Big Apple as a bartender, but my true love is food. I cook just about every day, I search for good food everywhere, and pretty much always find it. I don't consider myself a food critic, I don't have the culinary background for that kind of expertise. I do however know good food, good chefs and good restaurants. I report back about my culinary adventures, and I choose to leave out my unsatisfactory experiences. We have enough negativity in our daily lives, I don't want to add to that. All the recipes in my FROM MY KITCHEN and DOTW blogs are cooked and prepared by me. All pictures are taken by me. I don't always eat everything you see in my pictures, but you bet your buns, I do try everything. Last but not least, you should know that I am a huge Top Chef fan. I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion. So I will continue to seek them out, and I hope you join me in my journey!
