Bourbon Glazed Salmon

It’s not always easy to find new recipes for fish and seafood dishes. I just recently found this one, and it’s amazing. As usual it’s pretty easy, and it’s from the Cooking Light series of recipes. It’s just what you need to keep up that bikini figure, or, if you’re like me, try to attain one!

 

Bourbon Glazed Salmon

What you’ll need:

  • 4 (6 oz) Salmon fillets
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 3 garlic cloves, crushed
  • 1 tbsp fresh lime juice
  • 1/4 tsp black pepper
  • 1/4 cup finely sliced green onions
  • 1 tbsp sesame seeds, toasted

Combine brown sugar, bourbon, soy sauce, ginger, lime juice, garlic and black pepper in a bowl, and then transfer it to a plastic bag. Add the fish to the bag  and seal. Marinate in the refrigerator for 1 1/2 hours, turning occasionally.

Heat large non-stick skillet over medium-high heat. Coat pan with cooking spray or          vegetable oil. Add fish and marinade to the pan. Cook the fish 4 minutes on each side, or until desired doneness. Remove from the pan, and remove the skin (unless of course you cooked it without the skin). Drizzle sauce from the pan over each serving. Top off with green onions and toasted sesame seeds. Serve with white, brown, Jasmine or sticky rice!

I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion.
