From My Kitchen: Cajun Potato Salad

If I had to pick one food to eat for the rest of my life, it would definitely be potatoes. It’s probably my German heritage. But either way, there are so many dishes you can make with this one vegetable. Of course potato salad is on top of that list. With all the holidays coming up, it might be a good idea to add this to your menu. This is my favorite potato salad, just because it has a bit of a kick to it, and it is anything but boring.

What you’ll need:

  • 1 1/2 pounds of small potatoes (red or regular)
  • 1/2 cup Duke’s mayonnaise
  • 4 hard boiled eggs
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1 tsp Slap Ya Mama Creole seasoning
  • 2 tbsp Creole mustard
  • 1/4 cup green onions, chopped
  • 1/4 cup celery, chopped (I omitted them, because I don’t really like them)
  • fresh parsley, chopped

In a medium bowl, mix the mayonnaise with all the seasonings. Add green onions, celery and parsley,

Cut the hard boiled eggs into small pieces, then add them to the mayonnaise mixture.

Add the potatoes to the mixture and stir well. Refrigerate until you’re ready to serve.
