
Quick weekday dinners are an art! We’re all busy all the time, so a quick and easy dinner is like a gift. Having had two children, I learned quickly how to go about it, wanting to avoid packaged food as much as possible. This Taco Bake is easy even for a beginner, and it is delicious even to the harshest critics. You can easily feed about four people with this, or more if you add rice. You can also pack slices for lunch, whatever your heat desires.

What you’ll need:
- 1 1/2 pounds ground beef
- 1 tbsp chili powder
- 1 1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp ground paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1 (16 oz) oz can refried beans
- 1 (16 oz) jar salsa
- 1 cup Monterrey Jack cheese
- 1 cup mild cheddar cheese
Preheat oven to 350 degrees.


Preheat the oven to 350 degrees.
In a large skillet, brown the ground beef. Add the seasonings. Mix and heat well.


In an oven proof baking dish, start layering the ingredients. The first layer are the refried beans. Then add the ground beef.


Next up are the is the salsa. Finish up with the cheeses. Bake in the oven for 20 to 25 minutes. Serve hot as is, or serve with rice. Add sour cream, jalapeños or anything you like to enhance this delicious dish!
