From My Kitchen: Kielbasa & Peppers

Kielbasa is literally one of my favorite things to eat. I could just fry it up, and eat the whole thing just like that. No problem. But you know, dinner. Gotta make dinner. If you add some onions and peppers, and serve it over rice, it’s definitely one of the tastiest and easiest meals ever made. I make often, it’s a perfect weekday meal, and you will love it without question.

What you’ll need:

  • 1 pound of Kielbasa
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 (14 oz) can of diced tomatoes
  • 1 tbsp onion powder
  • 1 tsp paprika
  • salt and pepper to taste

In a cast iron skillet, heat 1 tbsp of olive oil. Add sliced Kielbasa and panfry until slightly browned. Remove from pan and set aside.

Add chopped onion and sauté for 4 – 5 minutes. Add chopped peppers and cook until soft.

Add salt, pepper, onion powder and paprika, stir and cook for another 2 minutes. Add diced tomatoes and cook for another 2 minutes.

Add Kielbasa back into the pan. Stir and simmer on medium heat for another 5 minutes. Serve over rice.
