DOTW: Raspberry Mojito

I’m literally sweating as I write this. Late August, it’s hot and humid. I can’t wait for tonight, because you better believe I am having a few cocktails on my stoop in the Bronx. Refreshing ones. Delicious ones. What am I dinking? Raspberry Mojitos. Yes its Wednesday, but that’s really my Saturday, because I work Fridays through Tuesdays. So yes, I’m having a couple of cocktails to unwind. When is your Saturday? Have a Mojito.

What you’ll need:

  • 2 oz Bacardi Raspberry
  • a few splashes of simple syrup
  • 3 oz Sprite
  • 5 raspberries
  • 2 fresh mint leaves
  • 1 tsp fresh lime juice
  • raspberries, lime slices and/or mint leaves for garnish

On the bottom of a cocktail shaker, muddle the raspberries and the mint leaves with the lime juice. Add the Bacardi, simple syrup and ice. Shake well. Pour contents into a tall cocktail glass. Top off with Sprite and garnish.
