From My Kitchen: Greek Garlic Chicken

Love Greek food? Yep, me too. Who wouldn’t? So much flavor, spices, herbs, and yes, the garlic. I don’t think I ever met anyone who doesn’t like garlic. Greek food is traditionally packed with garlic, so yes, we like it! This recipe is an easy week day dinner, chicken is pretty much always on the menu in my household, and this is a good one. Please be aware ahead of time, that this recipe involves some marinating time, so prepare with plenty of time ahead.

What you’ll need:

  • 8 chicken thighs (I chose boneless, skinless)
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp Dijon mustard
  • 2 tsp salt

In a small bowl, combine olive oil, lemon juice, garlic, oregano, thyme, mustard salt and pepper. Add the chicken to a larger bowl, then mix the chicken and the marinade together and let it soak in the refrigerator for 2 to 8 hours.

Preheat the oven to 350 degrees. Transfer the chicken to a baking dish, then pour the rest of the marinade on top. Bake the chicken for 45 minutes. If you chose skin on chicken thighs, they should be nice and brown now. Baste the chicken, so you can get lots of the garlic marinade on top. Serve with rice of your choice.
