From My Kitchen: Chicken Delmonico

I’m always on the hunt for a new recipe! I have my mainstays, that are always in my rotation for dinner, but I try to cook something new at least once a week. Lucky for me, I came across this gem by Emeril Lagasse, this super delicious chicken dish. Winner, winner, chicken dinner! This one is served with a Bernaise Sauce, and I made my life a little easier by purchasing a packaged sauce. With this addition, this was a fairly easy dinner to make, it’s great for the whole family, a dinner for friends, or even for meal planning for the week.

  • 1 tbsp olive oil
  • 1 package of Bernaise Sauce
  • salt and pepper to taste
  • Emeril Lagasse’s Essence
  • 1/2 pound potatoes, cut into small pieces, cooked
  • 1/2 pound mushrooms, stemmed and sliced
  • 1/2 pound ham, cut into small pieces
  • 1/2 pound frozen peas
  • 2 tsp fresh garlic
  • 1/2 cup minced onions
  • 1 tbsp butter
  • 4 boneless, skinless chicken breast

Heat olive oil in a frying pan. Season the chicken with Essence, then cook for 3 – 4 minutes on each side on medium to high heat. Remove from skillet and keep warm. Wipe the skillet with a paper towel, then add onions and cook for 3 minutes.

Add garlic, cook for one minute. Add ham and cook for 3minutes.

Add peas and cook for 3 minutes. Add mushrooms and cook for 5 minutes.

Add chicken back to the pan. Add cooked potatoes. Season with salt and pepper. Cook on low for another 3 minutes. Serve on a platter, with Bernaise Sauce poured on top.
