
Don’t even bother asking me when and where I found the recipe to this delicious cocktail, it has been my notes forever and a day. I was literally just waiting to get my hands on a pink gin, and then lucky me got a bottle of Xibal Equinox Gin as a gift, and this delicious liquor (from Guatemala) instantly became one of my favorites. Light, citrus-y, with a little pepper twist. I is the perfect gin for this cocktail recipe.

What you’ll need:
- 2 oz Xibal Equinox Gin
- 1/2 oz Chambord
- 1/2 oz fresh lime juice
- Canada Dry Ginger Ale
In a cocktail shaker, combine ice, gin, Chambord and lime juice, and shake well. Fill a highball or cocktail glass with ice, and strain the contents into it. Top off with ginger ale. Garnish with lime, raspberries or whatever your heart desires (I used tiny little flowers).
