From My Kitchen: Pan Seared Sea Bass

Fish is easy to cook. Wait, is it? It is most definitely simple, and also very quick, since it is done in no time. However, being that it doesn’t take much time to be done, it is very easy to overcook it, undercook it, and everything in between! So, while fish can be cooked in served in no time, it requires your full attention. As long as you keep that in mind, your delicious fish dinner (or lunch) should be a great success. I have always wanted to cook Sea Bass, being that I order it in restaurants quite frequently. I ventured off to a really good seafood market, and scored some really fresh Sea Bass, and went to work in my kitchen. It was super simple, delicious, and with the addition of a serving of Angelhair pasta, it was a perfect dinner.

What you’ll need:

  • 16 – 20 oz Chilean Sea Bass fillets, skin on
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt (or more if you like)
  • 1/4 tsp black pepper

for the sauce

  • 1/4 cup butter
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Pat the fish dry with a paper towel, then season them on both sides with salt and pepper. Heat a frying pan to medium heat, and add the butter. Then add the olive oil.

When the butter and oil are hot, add the fish to the pan, skin side down. Sear for 3 – 5 minutes, depending on the thickness of the filet. Wait til it no longer sticks to the pan, then turn them over. Sear for an additional 3 – 5 minutes. In a small sauce pan, melt the butter for the sauce. Add lemon juice, salt and pepper, then simmer for 2 minutes. Assemble fish on a plate, pour lemon sauce on top, then serve with a side of your choice.
