DOTW: Cranberry Ginger Mojito

Christmas is approaching with big ole steps. I haven’t shopped yet at all, but for sure I’m getting my menu ready for Christmas Day, and I’ve been looking for a great cocktail for the festivities. Once I came across this one, the choice was clear! Of course this cocktail is not specific to the Christmas holiday, but really for all winter holidays, no matter what your religion is. The mint, the ginger, the cranberries, all are things used in November and December, and I’m grateful for it, they always add up to something delicious. Mojitos are typically summer cocktails but with the addition of these special ingredients, this drink is holiday party ready. I think you will enjoy this one with your friends and family!

What you’ll need:

for the cranberry syrup:

  • 2 cups of fresh cranberries
  • 2 cups of water
  • 1 cup sugar
  • 1 tbsp grated ginger
  • juice of 1 lemon

for the cocktail:

To make the cranberry syrup, add the cranberries to a small pot with the water. Bring to a boil, then add the sugar. Add the ginger and the lemon juice. Stir and bring the temperature down to a simmer. Simmer for 5 to 10 minutes. Let the syrup cool down before using it.

To create the cocktail, muddle a few cranberries and mint leaves in a tall glass. Add ice, then the cranberry syrup, the rum and the fresh lime juice. Use the top of a cocktail shaker to shake the cocktail. Top it off with club soda. Garnish with fresh cranberries and mint leaves.
