#DOTW: Blueberry Gin Mojito

It’s time to shake it up. Do we all love a mojito? Of course we do. But what if we adjust it just a little bit, so we have a brand new cocktail experience? I say yes. So let’s swap out the liquor! We’re going to use gin instead of rum. Add some lemon and cucumber with the usual mint and fruit, and voilá, here goes a refreshing and delicious cocktail to brighten up your summer night.

What you’ll need:

To make the blueberry honey syrup, place 2 cups of fresh blueberries in a small sauce pan. Add 1/4 cup of water, 1/4 cup of honey and the juice of a quarter lemon. Bring to a boil, then lower the heat to simmer. Simmer for 15 minutes. Strain to remove the skins, then let it cool.

To make the cocktail add a few mint leaves and one or two cucumber slices to a cocktail shaker and muddle them. Add ice, gin, lemon juice and blueberry honey syrup. Shake well. Pour the content into a tall cocktail glass and top off with club soda. Garnish with blueberries, mint leaves and/or lemon slices.
