From My Kitchen: Spicy Shrimp Pasta

I literally love everything with shrimp! And who doesn’t love pasta? I think it’s such a great combo. This is also an extremely easy recipe. You get to control of the spiciness of this dish by adding the perfect amount of red pepper flakes. The amount listed in the recipe below is making it mildly spicy (that’s the way I prefer it), but it’s up to you! Either way, this is such a great family dinner! I hope you’ll enjoy!

What you’ll need:

  • 1pound of medium or large shrimp, cleaned and deveined
  • 1 onion, chopped
  • 1 tsp olive oil
  • 2 cloves of garlic, minced
  • 1 (28 oz) can tomato puree
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh Italian parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 pound of your favorite pasta

In a medium bowl, combine the shrimp and season with salt and pepper. Mix well.

Heat a skillet to medium/high heat, add olive oil. Once hot, add onion and sauté for 2 minutes. Add garlic and sauté for another minute.

Add tomato puree, salt and pepper, stir well. Bring to a boil, then lower the heat to low, and simmer for five minutes. Add the shrimp (and whatever liquid accumulated on the bottom of the bowl). Bring the sauce back to a simmer, then let it simmer covered for another five to seven minutes. Remove from heat, add parsley, stir well. Add salt and pepper to taste. Serve with freshly cooked pasta of your choice.
