#DOTW: Winter Sunshine

How’s you hangover? I must be getting old, because New Year’s Eve caused me two days of recovery. Not fun. But I had fun celebrating 2021, leaving the horrendous 2020 in the rear mirror, wishing and hoping for some normalcy in the next twelve months. However, I’m ready for a cocktail! Something sweet and tropic. Something to make me forget about the cold rain outside, and about the headaches of the past year. Simple does it, like I prefer it. A tasty cocktail doesn’t have to be so difficult. This one only has three ingredients, plus some coconut flakes to make it look pretty, and to possibly nibble on. I love it.

What you’ll need:

  • 2 oz Bacardi Coconut Rum
  • 2 oz coconut milk (canned)
  • 2 oz freshly squeezed orange juice
  • coconut flakes

Add Bacardi, coconut milk and orange juice to a cocktail mixer with ice. Shake well. Garnish rim of glass with coconut flakes, add ice, then strain the ingredients of the shaker into the glass!

Hello there, fellow foodies! My name is Erica, I was born and raised in Germany, and moved to the US, New York City to be exact, in July of 1987. I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion. So I will continue to seek them out, and I hope you join me in my journey!
