So here we are. The coronavirus has us sitting at home with nothing much to do. For me personally it has been day 13 today, and there’s no end in sight. Lucky for me, I saw this coming and stocked up right before everything closed. Good thing all the supermarkets and liquor stores are open, so if need be (and I see plenty of need), let’s close out some of the evenings with a good old cocktail. Some bars and restaurants still deliver, some even cocktails. Thank God. But then, not everyone lives close to a delivery zone, so you’ll have to be your own bartender. I promise it’s not that hard. I found some fresh strawberries and limes, so I made this lovely concoction, and it’ll undoubtedly make for a sweet evening.

What you’ll need:
- 2 oz Bacardi (or quality rim of your choice)
- juice of 1/2 lime
- Ginger Beer
- 1 oz strawberry-lime simple syrup (2 cups sugar, 1 cup water, 2 cups strawberries, 1 – 2 limes, juice the fruit, heat with sugar and water, dissolve, cool)
- mint leaves
Muddle the mint leaves and syrup in a cup, then add ice and rum. Stir, then top off with ginger beer. Garnish with lime/mint/strawberry.
Cheers!
