Ok, so this is actually called a Gin Pomegranate Cocktail, but I thought that was just too boring, so just for Christmas I changed the name to Gin-gle Bell Rock-tail. It fits. It’s easy to make, especially if you’re looking to make a larger quantity for a holiday gathering. The honey doesn’t easily dissolve in cold liquids, so it’s a good idea to warm it up a little with the juices in a small sauce pan, and then let it cool. Of course you can use sugar or Agave instead, anything works. Use as much to suit your likeness for sweetness.

What you’ll need:
- 2 oz Hendrick’s Gin (or quality gin of your choice)
- 1 oz freshly squeezed orange juice
- 1 oz pomegranate juice
- 1/2 tsp honey (or more)
- 1 oz seltzer
Combine gin, orange juice, pomegranate juice, and honey in a cocktail shaker with ice. Shake well. Pour into highball glass filled with ice. Top off with seltzer. Garnish with orange slice, fresh thyme and/or pomegranate seeds. If you make the cocktail in a larger quantity ahead of time, please don’t add the seltzer until you are ready to serve!
Cheers and Merry Christmas!
