#DOTW: Winter Sunshine

I’m ready for some sunshine! Even if it’s winter sunshine. This liquid sunshine combines coconut and oranges (for a little extra vitamin C I assume), and it’s going to turn any frown upside down. I had a couple of these last night, let me tell you: so delicious. Get your blender ready!

What you’ll need:

  • 2 oz Bacardi Coconut
  • 2 oz pulp free orange juice
  • 2 oz canned coconut milk
  • ice cubes
  • coconut flakes, orange slice

Combine rum, orange juice and coconut milk in a blender with the ice cubes and blend into a slushy. Ganish with coconut flakes and/or orange slice.

Hello there, fellow foodies! My name is Erica, I was born and raised in Germany, and moved to the US, New York City to be exact, in July of 1987. I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion. So I will continue to seek them out, and I hope you join me in my journey!
