#DOTW: Bee’s Knees

Lord knows, I love me a good gin cocktail! I think it can be so refreshing once you combine it with the right ingredients. This drink is for the grown folks, and it involves some minor “cooking”. It’s al worth it, and I can see you all sitting on your porch, or deck, or fire escape (for us New Yorkers), and enjoy this on a mild night….

Cheers!

What you’ll need:

  • 2 parts Boodles Gin (or quality gin of your choice)
  • 1 part lemonade
  • 1 part honey-thyme gastrique (recipe follows)

Gastrique: heat 1/2 cup of white vinegar in a small sauce pan. Add a good handful of fresh thyme. Slowly add 1/2 cup of honey to the sauce pan. Bring to a quick boil, then simmer for 10 minutes. Strain liquid and let it cool.

Combine all ingredients in a cocktail shaker with ice and give a good shake to combine. Pour into highball glass (or Mason jar). Garnish with fresh thyme twigs and/or lemon slice.
