Smothered Pork Chops

This one of the favorite dishes I cook for my family on Sundays. I try to eat as light and healthy as possible during the week, so come Sunday I can indulge in whatever my heart desires. This one is scrumptious and Sunday-worthy! This recipe is actually by Tyler Florence, and is super easy to execute!

What you’ll need:

  • 4 – 6 pork chops
  • 1 cup flour
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 1 tsp cayenne
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1 cup chicken broth
  • 1/2 cup buttermilk
  • fresh parsley, chopped



In a shallow bowl or platter combine the flour, onion powder, garlic powder, cayenne, salt and pepper. Mix well. Dry off the chops, and dredge them in the flour mix. Heat the olive oil in a saute pan, and pan fry the chops 3 minutes on each side.

Transfer the chops into a sauce pot. Add a pinch of the flour mix to the oil in the saute pan and scrape up any pieces stuck on the bottom with a wooden spoon. Let the mix thicken in the pan. Add the chicken broth. Stir in the buttermilk to make a creamy gravy. Add the the gravy mixture to the pork in the sauce pot. Bring to a boil, then simmer for at least 5 minutes. Season with salt and pepper. Serve with mashed potatoes. Garnish with chopped parsley.
