Stuffed Peppers

This is still one of my favorite things to eat. I love everything with peppers! Over the years I have tried many versions and recipes, but this is the perfect one. I tried this with brown rice, and it’s not bad, but white rice makes this perfect.

  • 1 tbsp olive oil
  • 1 small onion
  • 1 1/2 pounds ground beef
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 6 large bell peppers
  • 1 (15 oz) can tomato sauce
  • 1 cup cooked rice
  • 2 cups shredded mozzarella cheese (divided)

In a skillet heat the olive oil and cook the onion for about 3 minutes. Add the garlic and cook for another minute. Add the ground beef, onion powder, garlic powder, paprika, salt and pepper and brown mixture for 7 – 8 minutes. In the meantime cook the rice.

Preheat oven to 350 degrees. Cut the tops off the peppers, and remove seeds and membranes, then place in a baking dish, standing up. Transfer the beef mixture to a large bowl, and add rice, tomato sauce and 1 cup of mozzarella cheese. Fill the peppers with the mixture.

Cover the baking pan with aluminum foil and bake for 30 minutes. Remove aluminum foil, and top off the peppers with the other cup of mozzarella cheese. Return to oven and bake uncovered for another 15 to 20 minutes. Serve with white rice on the side!

Hello there, fellow foodies! My name is Erica, I was born and raised in Germany, and moved to the US, New York City to be exact, in July of 1987. I have never missed an episode of the Bravo TV show. I have at this point visited almost 20 restaurants run by Top Chef contestants, and I'm continuously impressed by their skill, drive and passion. So I will continue to seek them out, and I hope you join me in my journey!
