Forever a crowd pleaser, I cook this dish on holidays, or if I have a group of friends coming over. You can make it with grilled chicken, as I did this time around, or with grilled shrimp, or plain, whatever your heart desires!
What you’ll need:
- 2 tbsp butter
- 1 cup finely chopped onions
- 2 garlic clove, minced
- 1 (8 oz) can tomato sauce
- 8 oz diced tomatoes, canned
- 8 tsp flour
- 2 tbsp water
- 1 1/2 cups Half and Half
- 1 cup milk
- 1/2 cup vodka
- 1/2 tsp salt
- 1/4 tsp red pepper
- 1 cup grated Parmesan Cheese
- 4 tbsp finely chopped basil
- 1 package penne pasta (or pasta of your choice)
Melt butter in a medium sized skillet over medium heat. Add onion and garlic and sauté for 3 minutes. Add tomato sauce and diced tomatoes and simmer for 8 minutes, partially covered. Combine flour and water, whisking until smooth. Add flour mixture skillet, stir and cook for 1 minute.
Add Half and Half, milk, vodka, salt and pepper. Combine and bring to a boil. Add cheese and simmer for 5 minutes.
If you are adding a protein, this would be the time to add it. Add the basil and stir. Combine with pasta of your choice!
Bon Appètit!
