
It’s the New Year, and we’re eating healthy, right? Lots of veggies, please. But healthy doesn’t have to be boring. I made this fantastic vegetarian dish right in the New Year, and it was fantastic. No meat was needed! It was so delicious and thoroughly filling. Is it simple to make? Of course it is. We are still recovering from the holidays, we don’t need time consuming, difficult recipes at this time of the year!

What you’ll need:
- 4 cloves of garlic, crushed
- 2 tbsp olive oil
- 1/2 cup dry white wine
- 1/2 cup Hood heavy cream
- 1 cup College Inn Chicken Broth
- 2 tbsp Hunts Tomato Paste
- 1/3 cup Bellino sun-dried tomatoes, diced
- 1/4 tsp Morton & Bassett Italian Seasoning
- 1/4 tsp McCormick Oregano
- 1/2 tsp McCormick Dried Thyme
- 1/4 tsp Mccormick Red Pepper Flakes
- salt and pepper to taste
- 1 package frozen John’s Gnocchi Di Patate
- 1/4 cup fresh grated parmesan
- 2 cups fresh spinach leaves


Add oil and garlic to a skillet and sauté over low heat for about 5 minutes. Add white wine and mix well. Add heavy cream and tomato paste, whisk to combine.


Add Sun-dried tomatoes, Italian seasoning, oregano, thyme, crushed red pepper, salt and pepper. Stir well.


Add the parmesan and stir well. Add salt and pepper to taste. Bring the sauce to a low simmer, then add the Gnocchi and simmer until fully cooked. Keep stirring occasionally to keep the gnocchi from sticking to the pan. Add splashes of chicken broth if needed.


Add spinach leaves. Stir well.
