We all need a quick dinner here and there, life is busy and tough sometimes. I’m all about weekday dinners that can be prepared in an hour or less. My children are adults now, but I raised them alone while working full time, so you better believe I had an arsenal of fast recipes.  This is an example of how to make a great dinner in minimum time and effort for busy people. Or lazy ones! It’s all good!

What you’ll need;

 

Cut the potatoes in half and boil them for 20 minutes in salted water. Preheat oven to 425 degrees.

In a large bowl combine cooked potatoes, shrimp, sausage and corn with the olive oil and Old Bay Seasoning. Using 2 baking sheets or aluminum pans, line each one with sheets of aluminum foil. Divide the contents of the bowl into 2 pans. Add salt and pepper.

Seal the aluminum foils tightly. Bake for 20 minutes at 425 degrees. And voilà!
