This dish is not for the weak. It is super simple, but precision is key. Also, the right equipment is needed. The rewards are worth it, the dish is super delicious! I had to make it a few times, and, quite honestly, it still didn’t come out perfectly. Hopefully yours comes out even better than mine did!
What you’ll need:
- 1 – 2 pound fresh salmon filet
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 1 garlic clove, minced
- 2 lemons
- 1/3 cup greek yogurt
- 2 tbsp mayonnaise
- 1.5 tbsp freeze dried dill
- 1 tsp granulated garlic
- a splash of heavy cream
- salt and pepper to taste
Heat the oil in a cast iron pan or a plancha griddle to high heat. Season the salmon with salt and pepper on both sides. Place the salmon in the pan skin side down. In the meantime, make a mixture of the butter, the juice of one lemon and the garlic. Pour over the fish, then cook for 11 – 13 minutes.
Turn the fish around, and cook for another few minutes to make sure it’s fully cooked.
Making a sauce for the salmon is optional, but I absolutely loved the addition of a Lemon Dill sauce. Combine yogurt, mayonnaise, dill, lemon juice, granulated garlic and heavy cream and heat in a small sauce pan. Add salt and pepper to taste. Serve over rice, and top off the lemon dill sauce.
