In these busy times it’s not always easy to keep making home cooked food. Work and social life, exercise, all kinds of things are keeping us so busy, who has time to cook? One of my missions on this website, is to post quick recipes, easy recipes, and delicious recipes, just to make it easier for everyone to be able to eat well, without spending hours in the kitchen. This one definitely qualifies, and I promise: it is super delicious!
What you’ll need:
- 3 – 4 boneless, skinless chicken breast
- 1 1/2 cups Hidden Valley Ranch dressing
- 1/2 cup Daisy Sour Cream
- 1 cup grated parmesan cheese
- salt an pepper
- 1/4 cup bacon crumbles (or more?)
- fresh parsley for garnish
Heat oven to 375 degrees. Spray an 8 x 11 baking dish with cooking spray. Sprinkle both sides of the chicken with salt, pepper and half the parmesan cheese. Place in the baking dish. In a medium bowl, mix the Ranch dressing and the sour cream, then pour mixture over the chicken. Sprinkle the rest of the parmesan cheese on top.
Bake for 25 minutes or until the chicken is fully cooked. Set oven to broil and broil the chicken for 3 minutes. Be careful and watch, the broiler can burn the chicken quickly. Remove from oven. Sprinkle the (hot) bacon crumbles on top.
Garnish with fresh chopped parsley and serve hot with potatoes of your choice.
