From My Kitchen: Firecracker Salmon

I think it’s official! Salmon might just be my favorite fish. I cook a lot of it. Unfortunately it gets harder and harder to find new recipes, every once in a while your tastebuds are asking for a brand new experience. Finally I found this recipe, which definitely has a kick to it. It’s not hard at all to cook, and it takes minimal time. It does need to marinade for at least a few hours, preferably over night, so keep that in mind when you are ready to prepare this meal!

What you’ll need:

In a medium bowl, stir together oil, brown sugar, soy sauce, lime juice, sriracha, garlic, ginger, and black pepper. Place salmon in a container and pour the mixture over the fish. Marinade for a few hours, or even overnight if possible.

Preheat oven to 375 degrees.

Place salmon onto a large piece of aluminum foil and pour the mixture on top. Fold foil to completely cover the salmon.

Bake for 18 – 22 minutes. Sprinkle with green onions. Serve with rice.
